This green leafy vegetables list can be a big help when you're starting off on a raw food diet, or are just looking for the best vegetables to enjoy in raw salads.

Why?

There are plenty of vegetables that can be eaten raw, but many of them are starchy, cruciferous, or just plain tough in an uncooked state, which is the ideal way to eat any food.

This list gives vegetables that can be eaten raw while also being pleasant to chew and digest. You probably know all about lettuce, but there are many other leafy greens you may be missing out on.

Please be aware that everyone has unique digestive vitality levels that can improve and decline due to a number of dietary, lifestyle, and general health factors. Others may like or dislike certain flavors. Some vary drastically in digestibility and flavor depending on when you pick it. Rocket/arugula, for instance, can be pleasantly spicy or way too hot depending on its maturity.

Those listed here are the ones I digest without any problems when eaten even in large quantities in a raw state. Your own experience with them may vary. Below this table I also list some leafy green vegetables that can be eaten raw, but are known for causing some problems.

Ideal Leafy Green Vegetables List:

young bok choy, endive, Cylon spinach, Chinese spinach/water morning glory/kang kong/water spinach, purslane, corn salad, watercress, arugula/rocket, spinach, celery (not a leafy green, but extremely easy to digest), and the many lettuce varieties, including: loose leaf, romaine, red leaf, green leaf, iceberg (crisphead), summer crisp, butterhead (Boston or bibb), cos, imperial, lollo ross, and round lettuce (Learn about the many types of lettuce here.)

The above vegetables are the ideal foods that will allow you to thrive on a good raw diet. Embrace them as a regular part of your diet and you won't regret it.

But surely that can't be it, right? I also regularly eat the leafy greens below.

Is That All?


So are these the only vegetables you can eat on a raw food diet? Definitely not. This leafy green vegetables list doesn't even touch the wonderful vegetable fruits like tomatoes and cucumbers, or the slightly harder-to-digest vegetables like broccoli, cauliflower, and many others.

The ones listed here are merely the ideal ones. In fact, there are plenty of other leafy greens that you rarely find at markets, and they're not listed here. Get adventurous and you can certainly grow some delicious uncommon greens.
