For Good Raw Pasta, This Works Like Crazy

I grew up eating Italian food two or three times a week, and when I first went raw I really missed pasta with delicious tomato sauces heaped on top.

Eventually I discovered spiralized vegetables make a very close pasta substitute if you pick the right ones. They're just as tasty but don't mess with your health like grain-based pasta does.

The best ones I've found for raw pasta are summer and winter squashes. Of all the squashes I've tried, kabocha most closely replicates the texture and taste of pasta, and it's my favorite.

After spiralizing up some squash, heap a delicious raw pasta sauce on top and you're good to go.
