Are Blended Greens Better Than Whole Greens?

by Angelika

Angelika's Question:

Is it better to eat the salad whole or better to make a green soup, smoothie, or blended salad?

Andrew's Answer:

Blending a salad in any way is the equivalent of chewing a food extremely well with your teeth. The blender can possibly do a better job of it than you can, especially with very tough greens.

If your stomach is not up for large volumes of greens when you're starting out, blending them may make them -at least seem- to be easier to handle.

However, there are downsides. The chewing process mixes saliva into the food, which begins digestion. Swallowing food without chewing means this never occurs.

I don't think this is a huge problem. I eat most of my greens whole, but periodically I'll blend them up in a smoothie or soup.

If you want to blend your greens once in awhile, go ahead.
