Gas ripening

Here in Australia, & I'm guessing US also, bananas are picked very green, transported to destination and at the wholesaler put into ripening rooms (warm air + ethylene gas) until they soften a little & get the uniform yellowish colour consumers expect. Not the same fruit as one matured on the plant.
