Raw Chewy Bars Recipe

Colleen Crawford's Raw Chewy Bars Recipe

Ingredients:
1 cup of dates
1 cup of almonds
1 cup of raisins
1 tsp (or more) of fresh squeezed lemon juice
Some coconut shavings

Directions:

1) Combine all of the above ingredients with the exception of the coconut shavings in a food processor till the mixture is well blended.

2) Remove the mix from processor and take two round cake pans, sprinkle coconut in the bottom of the pans, divide mixture in two, press into coconut mixture, turn over in pan and sprinkle some more coconut on the top.

3) Flatten out in the pan and chill in the refrigerator.

4) Remove and cut into squares. Best served right out of the refrigerator.

Andrew's Note:

I haven't tried this recipe, but it sounds like a nice treat for special occasions and holidays.

However, based on the ingredient list it's unlikely to be easy to digest and not something you should be eating on a regular basis on a healthy raw food diet.

The healthiest way to eat is to consume monomeals of whole fruits.

Well-combined salads with tasty low fat raw dressings and sauces on them are also nice.

So enjoy this recipe, but just remember that it's a treat, not something to be eaten regularly.
