Should We Eat Corn?

Carli's Question:
Hi Andrew,
Was wondering, I notice you use corn in one of your salad recipes. Is corn something that a raw foodist could have every day?
I did not notice much about it in your veggie recommendations, so would like to know its value and how often one could/should consume it.

Andrew's Answer:
I eat a good amount of corn - but here's the catch - do it only when I can get it freshly picked from the field.
That means that I only eat it in the late summer and early fall when it's actually in season.
Corn ripens in a manner opposite that of most crops. It's at its highest sugar content the moment you pick it and it progressively turns to starch (and becomes harder to digest) afterward. Within a day or so of being picked you can't really call it an ideal food.
So my suggestion is to eat all the corn you please when you can get it fresh, which should leave you cornless about three quarters of the year. I'd say that's a sufficient span to keep your corn intake from going overboard.
