So Yummy, So Simple Mango Pudding

This recipe is so yummy and so simple to make.

The peak of the mango season is usually June/July, but depending on where you live, it may vary.


1 Large Mango
Date water - from soaked dates
1 Valencia/Navel Orange - juiced
Raw Carob Powder (optional)
Organic Coconut Flour (optional)
Fresh Vanilla Bean Powder (optional)


1) Peel/cut off the skin from the mango and blend till smooth, thick and creamy with date water and orange juice.
2) Add the liquid ingredients liberally because if the mango is very juicy, you will not need much water. The liquids are more for the unique flavor.
3) Afterwards, you can add (optional) a small amount of carob powder, coconut flour and vanilla to create a different flair to the pudding.

Pour the pudding into a nice dish and then garnish with cashew pieces, fresh mint, blueberries and strawberries. You can sprinkle some ground up almonds on top.
