What About Mushrooms On A Raw Food Diet?
by Erik Nielsen
Are mushrooms healthy to eat on a raw food diet? I do love them on my salads. I realize they are neither a fruit nor a vegatable. They're not even a plant, but rather a fungus. Any insights?
Erik Andrew's Answer:
I enjoy mushrooms, and they make a nice periodic addition to salads. Although I've heard them derided as being a mere fungus, I've found no convincing reason why we should avoid them, provided they are fresh (mushrooms can go bad quickly) and of the varieties known to be fit for human consumption.
It's unclear how well the body digests and absorbs the nutrients in mushrooms, but they certainly cause none of the digestive complaints we associate with hard-to-digest foods like grains, meat, dairy, and eggs.
If you like mushrooms, enjoy them. Following Up:
