Andrew's Answer: The most obvious physical reaction to salt consumption will be water retention.
The body uses water to sequester processed salt, which is quite harmful. When you eliminate processed salt from your diet and your body has the chance to excrete the built up salt, you'll start dumping the excess water within a week or two.
In very overweight people, this can amount to the loss of 30 pounds or more. More commonly people lose 3-10 pounds.
