Patricia's Question:
I had always heard that onions and garlic were very good for a person, and since I read that your dressings in Savory Raw Dressings And Sauces do not contain them, and since they are vegetables, I would like to ask you, why not?
I am sure you have very good reasons, so I would just like to know what your opinions are on this subject. ----Thanks!
Andrew's Answer
Hi Patricia.
I don't include onions and garlic because they are foods that can be considered less than optimal for humans for a number of reasons. They are both members of the troublesome Allium family (lilies) of plants.
All of the allium plants contain some amount of a variety of harsh chemicals meant to drive away predators such as you and me.
You can read about onions here.
Garlic is discussed in this article.
Since I wanted all of the recipes in Savory Raw Dressings and Sauces to be not only delicious, but also healthy and easy to digest, it just didn't make sense to include these foods as ingredients. Read more about the recipes here.
